What Is Patatas Bravas?
Patatas Bravas is a really popular tasty Spanish potato tapas dish that’s super simple to make.
These delicious Spanish potatoes are Cubes of crispy fried potato are served mixed into a rich smoky spiced paprika flavoured tomato sauce with a generous scattering of chopped flat leaf parsley.
And of course you can add a drizzle of garlicky mayonnaise over the top too, just to make them even more delicious!
This Bravas tapas dish is so very moreish you’ll struggle walking past it without digging in!

- 2 tbs olive oil
- 1 onion – finely chopped
- 2 garlic cloves – finely chopped
- 1 red chilli – finely sliced
- 14oz can crushed tomatoes (400g tin chopped tomatoes)
- 2 tsp smoked paprika
- 2 lb (around 1kg) baby new potatoes – Yukon gold potatoes or russet potatoes work well for this dish
- sea salt
- cracked black pepper
- small bunch flat leaf parsley
How To Make Patatas Bravas
This Patatas Bravas recipe is easy and a super delicious summery way to serve potatoes.
Step One – prepare the vegetables ready to make the Bravas tapas
- Firstly prepare your vegetables – peel and dice the onion, slice the red chillies, peel and chop the garlic and dice the potatoes – you can leave the peel on if you prefer.

Step Two – make the Patatas Bravas sauce recipe
- Add a tbsp of olive oil to a saucepan and gently fry the onions, garlic and chilli over a low heat for around 5 minutes.

- Tip the tin of chopped tomatoes into the saucepan with the onions, garlic and chilli.

- Add the smoked paprika to the saucepan with the tomatoes, add in a pinch of sea salt and cracked black pepper – to suit your own tastes.

Step Three – boil the potatoes
- Put the diced potatoes into a saucepan with boiling water and bring the pan back to the boil.
- simmer with the lid on for around 5-7 minutes until the potatoes are just tender.

- Once the potatoes are just tender, drain them well in a colander.

Step Four – fry the potatoes ready to go into the Bravas sauce recipe
- Add a tbsp of extra virgin olive oil to a large frying pan over a high heat, then tip the drained potato chunks into the pan.

- Stir fry the potatoes – stirring often until they’re crisping up all over.

Can I freeze Patatas Bravas?
This dish doesn’t work to great when frozen. The potatoes end up mushy when defrosted and reheated.
It’s best to store leftovers in the fridge in an air tight container and use them within 48 hours.

Super easy Patatas Bravas recipe – add a little Spanish flare to your summer and throw together a simple tapas selection for friends.
Ingredients
- 2 tbs olive oil
- 1 onion
- 2 garlic cloves
- 1 red chilli
- 400g tin chopped tomatoes
- 2 tsp smoked paprika
- 1kg new potatoes
- pinch sea salt
- pinch black pepper
- small bunch flat leaf parsley
Instructions
- Add a tbs olive oil to a saucepan and gently fry the chopped onion, garlic and chillies until sofened.
- Add the tinned tomatoes, smoked paprika and season with salt and pepper.
- Simmer the sauce with the lid off whilst you cook the potatoes.
- Peel and dice the potatoes, boil them in water until just tender and then drain well.
- Add a tbs of olive oil to a non stick frying pan and fry the potato cubes until browning all over.
- Remove the potatoes from the pan with a slotted spoon and stir gently into the tomato sauce.
- Tip the potatoes into a serving dish and scatter over the chopped flat leaf parsley.
