Are you looking for a casserole freezer cooking plan? In this post, I’m sharing how I made these casserole freezer meals and the plan for you to do the same.

Casseroles are great meals to make ahead of time and freeze for a quick meal later on.

They are really easy to heat up – just turn the oven on, throw them in, and serve your family a great, warm meal with little time or effort!

If you work late, but still want to feed your family a great meal, freezer casserole meals can be a huge life saver. Teach your children or have your spouse put the meal in the oven, so everything is ready to enjoy a family meal when everyone gets home.

With Fall here, I’m all about warm, comfort foods. Yummy casseroles, warm soups, and all things comfort.

I wanted to stock our freezer with our favorite casseroles to make cooking easier for me in the weeks ahead. After I have these meals made, I just have to pop them in the oven and dinner is done!

I’ll show you everything you need to make this casserole freezer cooking plan, too, so you can stock your freezer with easy meals!

Casserole Freezer Meals:

I portioned these into 2-3 serving casserole pans. There is just 2 of us, so I wanted these to be a good size for us with some leftovers for lunches.

You can make whatever size portions best suit your family.

What kind of pans should you use?

I got the foil pans from Dollar Tree. They have a lot of sizes and packs of 2 for just $1, so I can throw them away after we have the meal.

These make clean up a breeze, and keeps you from having to put all of your dishes in the freezer.

How long is a casserole good in the freezer?

Casseroles freeze really great for 3-6 months when covered well.

Casseroles are really great to batch cook and freeze. You can make several at once, and freeze them for many meals in the future.

These freezer casseroles are also great to have on hand to take to sick family or friends, new moms, or someone going through a hard time.

Ingredient List:

Note: I bought as much as I could at Aldi to make this as frugal as possible. They have great prices and had almost everything I needed!

Foil Pans – from Dollar Tree. I used 15. (You may want 2 deeper pans for the lasagna)

11 Chicken Breasts

4.5 -5 lbs ground beef

3 cans cream of chicken soup

2 cans cream of mushroom soup

16 oz sour cream

3 cups white uncooked rice

1 bag of frozen cheese ravioli

2 sleeves of Ritz style crackers

2 sticks + 1/4 cup butter

1 packet of taco seasoning

1/2 cup salsa

4 oz can diced green chiles

10 small flour tortillas

2 cups shredded cheddar cheese

16 oz bag frozen chopped broccoli

1 cup milk

3/4 lb Velvetta style cheese

12 oz box oven ready lasagna noodles

1 lb shredded mozzarella cheese

1/4 cup chopped basil leaves

4 cups cottage cheese

2 eggs

1 cup grated Parmesan cheese

12 oz tomato paste

2 29 oz cans tomato sauce

1 14.5 oz cans diced tomatoes

1 1/2 tbsp poppy seeds

Non stick cooking spray

These are some great casseroles to make and freeze!

Poppyseed Chicken Casserole:

4 Chicken breasts

1 can cream of chicken soup

8 oz sour cream

1 1/2 tbsp poppy seeds

1 stick butter

1 sleeve Ritz style crackers

Chicken and Rice Casserole:

4 chicken breasts

1 cup rice

1 can cream of chicken soup

1 can cream of mushroom soup

8 oz sour cream

1 stick butter

1 sleeve Ritz style crackers

Ravioli Bake:

1 bag frozen cheese ravioli

1 lb ground beef

1 14.5 oz can tomato sauce

1 14.5 oz can diced tomatoes

1 cup shredded mozzarella cheese

Taco Casserole:

1 1/2 lb ground beef

10 small flour tortillas

1/2 cup salsa

4 oz can diced green chiles

1 packet taco seasoning

2 cups shredded cheddar cheese

Chicken, Broccoli & Rice Casserole:

2 cups rice

3 chicken breasts

1 can cream of chicken soup

1 can cream of mushroom soup

1/4 cup butter

1 cup milk

16 oz package frozen chopped broccoli

3/4 lb Velvetta style cheese

Lasagna:

12 oz box oven ready lasagna noodles

1 lb shredded mozzarella cheese

2 lbs ground beef

1 29 oz can tomato sauce

1 14.5 oz can tomato sauce

12 oz tomato paste

1/4 cup chopped basil leaves

4 cups cottage cheese

2 eggs

1 cup grated parmesan cheese

1. Boil chicken breasts.

You can boil your chicken breasts in a large pot or place them in the crockpot in the morning, and make your freezer meals later in the day.

If using a large pot, you may have to boil half at a time.

2. Brown ground beef.

Use a large skillet to brown the ground beef. Drain the grease.

3. Spray foil pans.

Lay out your foil pans and spray them with non stick cooking spray.

4. Cook rice.

Boil 3 cups of rice and set aside.

5. Mix tomato sauce, diced tomatoes, and tomato paste in large pot.

Add the tomato sauce, diced tomatoes, and tomato paste to a large pot and let simmer.

6. Shred chicken breasts in mixer.

I like to use my mixer to quickly shred chicken breasts, but you can also use a fork.

If you cooked your chicken in the crockpot, it will be easier to shred with forks.

7. Make Poppyseed Chicken casserole.

To make the poppyseed chicken casseroles, mix about 4 shredded chicken breasts, 1 can cream of chicken soup, 8 oz sour cream, and 1 1/2 tbsp poppy seeds.

I used my mixer to quickly mix this for me.

Melt 1 stick of butter in the microwave.

Crush 1 sleeve of Ritz style crackers and mix with the melted butter.

Divide and spread the casserole mix into 2 foil pans (or 1 for a larger portion), and sprinkle the crackers on top.

You can set this aside, place in the fridge, or go ahead and cover with foil to place in the freezer.

Label the aluminum foil with: Poppyseed Chicken, Bake 350 degrees for 30 minutes.

8. Make Chicken and Rice casserole.

To make the Chicken and Rice casserole, mix about 4 shredded chicken breasts, 1/3 of the cooked rice, 1 can cream of chicken soup, 1 can cream of mushroom soup, and 8 oz sour cream.

I again used my mixer for this to make it quick and easy.

Melt 1 stick of butter in the microwave.

Crush 1 sleeve of Ritz style crackers and mix with the melted butter.

Divide and spread the casserole mix into 3 foil pans (or 1 for a larger portion), and sprinkle the crackers on top.

You can set this aside, place in the fridge, or go ahead and cover with foil to place in the freezer.

Label the aluminum foil with: Chicken and Rice Casserole, Bake 350 degrees for 40 minutes.

9. Make Chicken, Broccoli, and Rice casserole.

To make the Chicken, Broccoli, and Rice casserole, mix the remaining shredded chicken, the remaining rice, 1 can cream of mushroom soup, 1 can cream of chicken soup, 1/4 cup butter, 1 cup milk, frozen broccoli, 3/4 lb diced Velvetta style cheese.

I used my mixer again to get this mixed well and quickly.

Spread into 4 foil pans (or whatever portion works for you), and set aside, place in the fridge, or go ahead and cover with foil and label.

Label: Chicken, Broccoli, and Rice Casserole. Bake 350 degrees for 30-35 minutes.

10. Make Taco Casserole.

To make the taco casserole, mix 1 1/2 lb ground beef with 1 packet taco seasoning mixed with 1 cup of water, 1/2 cup salsa, and the diced green chiles.

Tear the small flour tortillas in half and place 5 halves in the bottom of each foil pan.

Layer a small amount of the beef mix on top, followed by shredded cheddar cheese. Repeat to make another layer – tortillas, meat, cheese.

Set aside, place in the fridge, or go ahead and cover with foil and label.

Label: Taco Casserole, Bake 375 degrees for 30-35 minutes.

11. Mix remaining ground beef with tomato sauce mix.

Add the remaining ground beef to the pot with the tomato sauce mix.

12. Make Ravioli Bake.

To make the Ravioli Bake, divide the frozen ravioli between 2 foil pans, top with beef sauce mix and shredded mozzarella cheese.

Set aside, place in the fridge, or go ahead and cover with foil and label.

Label: Ravioli Bake, bake 350 degrees for 30-35 minutes.

13. Make Lasagna.

To make the lasagna, use 2 deeper foil pans.

Whisk 2 eggs and mix with the cottage cheese, Parmesan cheese, and 1/2 the basil.

Place 4 oven ready lasagna noodles in the bottom of each pan. Layer cheese mix, followed by a layer of meat sauce and shredded mozzarella cheese.

Repeat for another layer – noodles, cheese mix, meat sauce, mozzarella cheese. Sprinkle with remaining basil.

Label: Lasagna, Bake 350 degrees, 35-45 minutes.

14. Cover pans with foil, label, and place in freezer.

If you haven’t already, cover the pains with foil, label, and place in the freezer.

Poppyseed Chicken: Bake 350 degrees for 30 minutes.

Chicken and Rice Casserole: Bake 350 degrees for 40 minutes.

Chicken, Broccoli, and Rice Casserole: Bake 350 degrees for 30-35 minutes.

Taco Casserole: Bake 375 degrees for 30-35 minutes.

Ravioli Bake: bake 350 degrees for 30-35 minutes.

Lasagna: Bake 350 degrees, 35-45 minutes.
