Super Simple Sourdough Sandwich Bread

Like everyone else and their grandma, I’ve started making sourdough. While a traditional artisan loaf is beautiful and delicious, it can be both intimidating and time consuming. Sometimes you just need some tasty sandwich bread for a quick pb&j or grilled cheese. Typical Sourdough sandwich loaves require yeast, but the many thing I love about sourdough is not having to buy yeast.
After a bit of trail and error my Super Simple Sourdough Sandwich Bread recipe was born! Side note: this is not a traditional sourdough recipes, sourdough purists don’t come at me. This is simple a recipe for people who want to make a simple yummy tasting loaf.
Now you might be wondering, what makes this recipe so simple? Its the quick rise time due my handy helpers, sugar and a heating pad! This recipe is also in cups not grams making it simple for those just starting their sourdough journey.
The sugar helps the wild yeast rise faster, while the heating pad maintains a nice warm environment for it to grow. Even though there is sugar in this recipe it is a small amount, still way less than bread you buy at the store. It also have no effect on the tangy sourdough flavor.
This recipe is great for someone looking into making their own bread their family will love!
What You Need
- Active Sourdough Starter
- Water
- All-purpose or whole wheat flour. If using just whole wheat flour you will have to add additional water.
- Sugar or honey
- Salt
- Mixing Bowl and spoon
- Bread Pan
How To Make
In a large mixing bowl add 1 cup of sourdough starter, 3 cups of flour, 1 cup of water, 2 tablespoons of sugar and 1/2 teaspoon of salt .
Mix together until a loose shaggy dough is formed. Cover and let sit at room temp for 30 minutes- 1 hour
Next knead dough together to form dough ball, depending on how shaggy your dough is the more you’ll need to knead it. Cover with damp tea towel and let sit for 30 mins.
Preform 3 sets of stretch and folds 30 minutes apart. Learn how to do stretch and fold here.

After finishing your stretch and folds shape and place in bread pan. Cover and rise on counter till its double in size. How long this takes will depend on how warm your kitchen is and how strong your starter is. I speed up this process by using a heating pad because my kitchen is cold, and it usually take my dough between 4-6 hours.

After your dough has risen you can place in fridge overnight. This really helps the sourdough taste come through but isn’t necessary.
Preheat oven to 415f. Place bread pan straight in oven. I do not allow my oven to preheat before and do a cold start. If cooking from fridge allow to sit at room temp for 10 mins before placing in oven. Bake for 40-45 mins.
Remove from oven and rub butter on top. Allow to cool completely before cutting into.

For this particular loaf of bread I used whole wheat flour, so it your dough looks a little different than mine that’s why.

Rise time is completely dependent on the temperature of your kitchen and strength of your starter.
